Raw Hummus
-1 cup raw almonds, soaked overnight, rinsed thoroughly and patted dry with a clean kitchen towel (no need to be waste’n those paper towels!)
-1/4 cup – 1/3 cup water (start with a 1/4 and add more if needed)
-1/4 cup raw tahini
-1/2 teaspoon sea salt
-juice from 1 lemon
-1 tablespoon fresh minced parsley
-1/4 – 1/2 teaspoon ground cumin (adjust to taste)
-1/4 – 1/2 teaspoon paprika (adjust to taste)
-1 small clove garlic
Whiz the almonds around in your high-speed blender or food processor until they’re finely ground.
Add the water and make it all pretty smoooooth.
Add in remaining ingredients (and more water if you like – our hummus did thicken up during the day).
Blend until smooooth and adjust seasonings to taste.
