Pumpkin Mock-Curry

Yields: 1-2 servings

-1/2 sweet onion, sliced
-1/2 cup yellow split peas
-1/2 cup millet
-1 cup coconut milk
-1/2 cup pureed pumpkin
-1 teaspoon cumin
-1 teaspoon sea salt
-pinch of cayenne
-as many chopped leaves of kale as you can handle

Cook millet and yellow split peas separately.
PEAS: 1 to 4 ratio (peas to water). Rinse, boil and simmer (approximately 40 minutes, depending on how soft you like them.
MILLET: 1 to 2 ratio (millet to water). Rinse, boil and simmer (approximately 20 – 30 minutes).

In a saucepan, boil coconut milk and add sliced onion to cook.

Add pureed pumpkin and simmer until mixed.

Add cooked split peas and as many kale leaves as you’d like.

Serve over warm millet, garnish with hemp seeds and enjoy
